Preparation

Prepare the polenta: put a pot of water to boil and add salt. Once the water starts boiling, slowly add the maize flour and mix well. With a wooden spoon, always stir in the same direction while the water is boiling. Cook for 8 minutes.

Put the polenta into a baking dish and let it cool.

In the mortar crush the garlic clove, the red pepper and coarse salt.

Add olive oil and the chopped herbs.

Flavour the meat with the aromatic mixture.

Add pepper and let it sit for 60 minutes, bringing back the meat at room temperature.

Grill the spare ribs on both sides and add salt at the end of the cooking.

Cut the polenta into slices and grill on both sides. Add pepper and salt.

Serve the ribs with the grilled polenta, salad and herbs.
