Ingredients

  • 1/2 package of Polenta Valsugana Express Yellow
  • 250 g of cherry tomatoes
  • 250 g of anchovies
  • 2 spoons of breadcrumbs
  • 1 clove of garlic
  • parsley
  • oregano
  • extra virgin olive oil
  • salt, white pepper

  • 250 g of cherry tomatoes
  • 250 g of anchovies
  • 2 spoons of breadcrumbs
  • 1 clove of garlic
  • parsley
  • oregano
  • extra virgin olive oil
  • salt, white pepper

Preparation

Prepare the polenta: put a pot of water to boil and add salt. Once the water starts boiling, slowly add the maize flour and mix well. With a wooden spoon, always stir in the same direction while the water is boiling. Cook for 8 minutes.

Season the hot polenta with a spoonful of dried oregano and 2 tablespoons of oil.

Pour the polenta into a greased saucepan, level the surface and let it cool.

Wash and dry the anchovies, remove the bones.

Then, wash and dry the tomatoes and cut into pieces.

Chop the garlic and the parsley and add to the breadcrumb with 2 tablespoons of oil and some salt.

Season the anchovies and the tomatoes with oil, salt and pepper and spread over the polenta.

Sprinkle with the seasoned breadcrumbs and bake at 200° for 6-8 minutes.

Cut into slices and serve.
